Chicken Liver Pate Ingredients

  • 1 1/2 sticks of unsalted butter, at room temperature
  • 2 teaspoons Cognac or Scotch whisky
  • Freshly ground black pepper
  • Toasted baguette slices, for serving

How To Make Chicken Liver Pate

  1. Put the chicken livers, onion, garlic, bay leaf, thyme, and half a teaspoon of salt in a medium-sized pot. Add water and heat it until it starts to bubble a little. Cover the pot, turn the heat down to low, and let it cook. Stir it now and then. Cook until the livers are just a little pink inside, which should take about 3 minutes. Turn off the heat and let it sit, still covered, for 5 more minutes.
  2. Take out the bay leaf and throw it away. Use a spoon with holes to scoop out the livers, onion, and garlic, and put them in a food processor. Blend them until they are roughly mashed up.
  3. Turn on the food processor and add the butter, a little bit at a time, until it’s all mixed in.
  4. Add the Cognac, some more salt and pepper to taste, and blend until it’s totally smooth.
  5. Scoop the pâté into 2 or 3 big small bowls (ramekins). Put a piece of plastic wrap right on top of the pâté and put it in the fridge until it gets hard.
  6. Serve it cold.
