  1. Prepare the Chicken: Mix ground cinnamon, ginger, turmeric, pepper, 1 teaspoon salt, and 2 tablespoons oil in a large bowl. Coat the chicken pieces well.
  2. Brown the Chicken: Heat butter and 1 tablespoon oil in a tagine or skillet. Brown the chicken on both sides for 8 to 12 minutes. Set aside.
