- 1 tsp salt
- 1/4 tsp ground black pepper

- 250g light brown sugar
- 250ml red wine vinegar
- 90ml balsamic vinegar

- In a large saucepan over medium-high heat, add vegetable oil and finely chopped red onions. Stir continuously for about 10 minutes until the onions start to soften and become translucent.
- Sprinkle in the salt, black pepper, ground allspice, and chili flakes. Stir well and continue cooking for an additional 2 minutes. Your kitchen will start to smell wonderful!
- Pour in the light brown sugar, red wine vinegar, and balsamic vinegar. Stir everything together and bring the mixture to a boil.
- Reduce the heat to low and let the mixture simmer for 20 minutes. The chutney should reduce in volume and become dark and sticky.
