  • 10 firm pears, peeled and chopped into bite-sized pieces
  • 200g demerara sugar
  • 200ml cider vinegar
  • 100ml pear cider (perry)
  • 1-star anise
  • 1 tsp ground cumin
  • 2 red onions, chopped
  • 1 tsp grated ginger
  • Red chilies, halved (deseed if you like)
  • 50g sultanas

How To Make Jamie Oliver Pear Chutney

  1. Start the Base: In a big pot, combine the sugar, cider vinegar, pear cider, star anise, cumin, red onions, and ginger. Turn on the heat and bring it to a boil.
  2. Add Pears and Chillies: Once boiling, toss in the chopped pears and red chilies. Lower the heat.
  3. Simmer: Let the mixture simmer for 40 minutes. You’re looking for the liquid to thicken into a syrup and for the pears to soften but not turn mushy.
  4. Add Sultanas: Stir in the sultanas into the pot.
  5. Cool and Store: Take the pot off the heat and let it cool down. Once cool, spoon the chutney into clean, sterilized jars.
