This Jamie Oliver Vegetarian Paella is one of the easiest paella recipes that Jamie Oliver has created. This Vegetarian Paella is made of spring onions, garlic cloves, medium onion, green pepper, tomato, parsley, Padron peppers, green beans, brown rice, saffron, vegetable stock, mixed olives, and lemon.
This Jamie Oliver Vegetarian Paella uses the same ingredients as his prawn paella (Jamie Oliver’s Cheat’s Paella), but we remove the prawns and use vegetable stock to make it vegetarian.

Jamie Oliver Vegetarian Paella Ingredients
- 4 spring onions
- 2 garlic cloves
- 1 medium onion
- 1 green pepper
- 1 tomato
- 1/2 bunch parsley
- Olive oil
- 8 Padron peppers
- 120g green beans
- 250g cooked brown rice
- 1 pinch saffron
- 150ml vegetable stock
- 1 handful of mixed olives
- 1 lemon
- 1 lemon wedge (for serving)
How To Make Jamie Oliver Vegetarian Paella
- Char the spring onions in a dry pan over high heat for 2-3 minutes. Remove and set aside. Finely chop the garlic, onion, green pepper, tomato, and parsley stalks.
- In the same pan, add a tablespoon of olive oil over medium heat. Add the chopped veggies and cook for a few minutes. Add halved padron peppers and cook for 7 minutes until soft.
- Boil the green beans in water for 3 minutes. Drain and set aside.
- Stir in the cooked brown rice to the pan and increase the heat.
- Soak a pinch of saffron in hot water and add it to the pan. Add vegetable stock and cook until the liquid evaporates (10-15 minutes).
- Add a handful of mixed olives, lemon zest, and juice. Stir in the cooked green beans, charred spring onions, and parsley leaves. Serve with a lemon wedge.
