  • 350g asparagus
  • 2 small courgettes (zucchini)
  • 2 large eggs
  • 60g crème fraîche
  • 1 handful freshly grated Parmesan cheese, extra for serving
  • ½ lemon
  • Olive oil
  • 100g pancetta
  • ½ bunch fresh mint

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil.
  2. Use a peeler to make ribbons out of the asparagus and courgettes. Keep them aside for later.
  3. In a large bowl, mix eggs, crème fraîche, Parmesan cheese, and lemon zest. Season with salt and pepper.
  4. Cook the tagliatelle in boiling water as per package instructions. In another pan, heat olive oil and cook pancetta until crispy.
  5. Drain pasta, save some pasta water. Mix pasta with pancetta, mint, vegetable ribbons, and creamy sauce. Add pasta water if needed. Serve with extra mint and Parmesan.
