  • 2 tsp Mexican chili powder
  • 1 tsp ground cumin
  • 4 cups vegetable liquid stock
  • 2 cinnamon sticks
  • 1/2 cup coarsely grated cheddar or Mexican-style cheese
  • Sour cream, to serve
  • Chopped fresh coriander, to serve

How To Make Jamie Oliver Pumpkin Chickpea Soup

  1. Start the Base: Heat 2 tbsp of olive oil in a saucepan over medium-low heat. Add the thinly sliced leek and cook for 5 minutes until it softens.
  2. Add Aromatics: Stir in the crushed garlic, chopped oregano, Mexican chili powder, and ground cumin. Cook for 30 seconds until the mixture smells wonderful.
  3. Pour and Prep: Add 4 cups of vegetable stock, the chopped Butternut pumpkin, drained chickpeas, and cinnamon sticks. Bring everything to a boil.
