  • 15cl Baileys Irish Cream
  • 400g Biscuit(s) sablé(s)
  • 500g Mascarpone
  • 140g Sugar
  • 3 Eggs
  • 60g Melted Butter
  • 1 tsp Vanilla Extract
  • Chocolate Sauce

How To Make Baileys Cheesecake

  1. Preheat your oven to 180°C (350°F).
  2. Crush 400g of biscuits and mix with 60g of melted butter. Press this mixture into a springform pan.
  3. Bake the crust for 5 minutes, then let it cool. Lower the oven temperature to 120°C (250°F).
  4. In a bowl, combine 500g of mascarpone, 140g of sugar, 3 eggs, 15cl of Bailey’s Irish Cream, and a teaspoon of vanilla extract.
  5. Pour this mixture over the cooled crust.
  6. Bake the cheesecake for 1 hour in the oven, then turn off the oven and let the cheesecake cool inside for another hour.
  7. Refrigerate the cheesecake for at least 8 hours before serving.
  8. Before serving, garnish the cheesecake with chocolate sauce.
