- Kosher salt and black pepper, to taste
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1 teaspoon coriander
- 2 tablespoons extra virgin olive oil (about 1 oz)
For the Mushroom Sauce:
- 1 tablespoon ghee or unsalted butter
- 12 oz fresh large mushrooms, sliced (about 340g)
- 1/2 cup chicken broth (120ml)
- 3 green onions, chopped
- 2 garlic cloves, minced
- Kosher salt and black pepper, to taste
- Parsley for garnish
How To Make Chicken And Mushrooms
- Prepare the Chicken: Preheat the oven to 200°F (93°C) to keep the chicken warm. Slice the chicken breasts horizontally into thinner cutlets. Pat them dry with a paper towel. Season the chicken with salt and pepper, then mix the oregano, paprika, and coriander in a small bowl. Coat both sides of the chicken with the spice mixture.
- Cook the Chicken: Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat until shimmering. Add the chicken cutlets and cook for 3-4 minutes on one side. Flip them and cook for another 3 minutes or until cooked through. To check doneness, cut into the thickest part of the chicken. When done, transfer the chicken to an ovenproof platter and place it in the preheated oven to keep warm.
