  • 1/2 cup sour cream
  • 1 tablespoon white wine vinegar 
  • 3 tablespoons chopped fresh dill 
  • 1 English cucumber, sliced into1/8-inch-thick rounds
  • 1/2 medium red onion, thinly sliced 
  • Kosher salt and freshly ground pepper

  1. Cut the onion up. Put the pot or pan on medium heat and add the butter. Once the butter is melted, add the onion and stir it around a few times. 
  2. Cook for three to four minutes, until the onion is soft and clear but not brown.
  3. Add the peas and stir them around in the butter. Then add the stock and stir again. 
  4. Put the lid on top of the pot and slow the heat down. Peas that are frozen will only need to cook for about two minutes. Fresh peas will need to cook for about five to seven minutes. In either case, the peas should be cooked but still bright green.
  5. Take the pot off the heat and add the rough-cut mint. Either use a hand or stick blender or put the mixture in a blender and blend it until it’s smooth.
  6. To taste, add a little salt and pepper. I only needed about ⅛ tsp of each.
  7. You can serve it warm or cool it down and chill it to serve it cold. Always tastes good with a swirl of creme fraiche in the middle of the bowl.
