  • 2 large Onions, cut up
  • 3 medium Carrots, washed and cut up chunky
  • Giblets from 1 turkey
  • 2 sprigs Fresh rosemary
  • 3 teaspoons Cornflour or plain flour
  • 2 teaspoons Jam (e.g., quince)
  • 100 ml Acid (e.g., port)
  • 4 cups Chicken or turkey stock

How To Make Jamie Oliver Turkey Gravy

  1. Preparation: In an empty roasting tray, place 2 cut-up onions, 3 chunky-cut carrots, giblets, and 2 sprigs of fresh rosemary. This will serve as the base for your turkey or other meat.
  2. Roasting: Place your turkey or meat on top of the prepared base in the roasting tray. After roasting, separate the fat and juices from the tray. Store the fat for later use and bring the juices to a boil on high heat.
  3. Thickening: To the boiling juices add 3 teaspoons of either cornflour or plain flour. Stir continuously to avoid lumps and let the mixture thicken.
  4. Flavoring: Add 2 teaspoons of jam and 100 ml of your chosen acid (e.g., port for turkey). Stir well and let it simmer for about 20-25 minutes until it thickens and darkens in color.
  5. Straining and Finishing: Strain the gravy through a colander to remove larger particles. If there’s foam on top, move the pan to the side of the heat source to push the foam to one side and remove it. Taste and adjust seasoning if needed.
