- 10 firm pears, peeled and chopped into bite-sized pieces
- 200g demerara sugar
- 200ml cider vinegar
- 100ml pear cider (perry)
- 1-star anise
- 1 tsp ground cumin
- 2 red onions, chopped
- 1 tsp grated ginger
- Red chilies, halved (deseed if you like)
- 50g sultanas

- Start the Base: In a big pot, combine the sugar, cider vinegar, pear cider, star anise, cumin, red onions, and ginger. Turn on the heat and bring it to a boil.
- Add Pears and Chillies: Once boiling, toss in the chopped pears and red chilies. Lower the heat.
- Simmer: Let the mixture simmer for 40 minutes. You’re looking for the liquid to thicken into a syrup and for the pears to soften but not turn mushy.
- Add Sultanas: Stir in the sultanas into the pot.
- Cool and Store: Take the pot off the heat and let it cool down. Once cool, spoon the chutney into clean, sterilized jars.
