  • 600g White granulated or caster sugar

  2. Add greengages and 200ml water to a large saucepan. Add 3-4 strips of lemon zest. Simmer for 15 minutes, stirring occasionally. As the fruit softens, remove the stones that float to the surface. Count the stones to make sure all are removed. Take out the lemon zest strips.
  3. Mix in the sugar and juice from half the lemon. Stir until the sugar dissolves completely.
  4. Increase the heat and bring the mixture to a boil. Cook for 10 minutes, stirring often. Test the jam by placing a teaspoon on a frozen saucer. Wait for 1 minute and then push your finger through it. If it wrinkles, the jam is ready. If not, continue boiling and test again in 2 minutes. Use a thermometer to confirm the setting point at 105°C.
  5. Let the jam cool slightly. Pour it into sterilized jars. Sterilize jars by washing in hot soapy water, rinsing, and baking at 180°C for 5 minutes. Let the jars cool before sealing.

How Long Does Greengage Jam Last
