Tomato Soup & Croutons

  • 1 kg cherry tomatoes, on the vine
  • 4 large tomatoes
  • 1 red chili
  • 4 garlic cloves
  • 1 ciabatta loaf
  • 2 small red onions
  • 4 tbsp balsamic vinegar
  • A small bunch of basil
  • Crème fraîche, for serving

Guacamole Platter

  • A handful of mixed-color cherry tomatoes
  • 1-2 red chilies

  • 2 ripe avocados
  • 2 limes
  • ½ fennel bulb
  • 1 carrot
  • ½ cucumber
  • ½ pack of grissini or breadsticks (125g)

Prune Puddings

  • 1 tin of pitted prunes (290g)
  • 100g plain flour
  • 50g soft dark brown sugar
  • 50g unsalted butter, room temp
  • 1 tsp ground ginger
  • ½ tsp bicarbonate of soda
  • 1 egg
  • 75ml milk
  • Golden syrup, for serving
  • Crème fraîche, for serving

How To Make Jamie Oliver’s 30-Minute Tomato Soup Meal

  1. Preparation: Preheat the oven to 220°C (425°F). Place a large saucepan on low heat. Prepare your food processor with a standard blade.
  2. Tomato Soup: Place all types of tomatoes, red chili, and garlic cloves in a roasting tray. Drizzle olive oil and season. Roast for 12-15 minutes.
  3. Croutons: Tear the ciabatta loaf into 8 chunks. Drizzle olive oil and a pinch of salt. Place in the oven on the bottom shelf.
  4. Onion & Balsamic Mix: In the saucepan, sauté chopped red onions with olive oil and salt. Add balsamic vinegar and let it reduce.
  5. Blending & Serving: Remove roasted tomatoes from the oven and add them to the onions. Blend in batches with basil. Serve with a dollop of crème fraîche, basil leaves, and a drizzle of extra virgin olive oil. Serve with croutons.

Guacamole Platter

  • Mash avocados and mix with chopped cherry tomatoes, chilies, and coriander. Add lime juice and salt. Serve with sliced fennel, carrot, cucumber, and grissini.

Prune Puddings

  • Mix flour, sugar, butter, ginger, and bicarbonate of soda in a food processor. Add egg and milk. Divide into 4 microwave-safe cups with prunes at the bottom. Microwave for 6 minutes. Serve with golden syrup and crème fraîche.
