- 2 sticks of celery
- 3 carrots
- 2 large leeks
- 2 cloves of garlic
- 1 sprig of fresh rosemary
- 2 rashers of smoked streaky bacon
- 1 tablespoon olive oil
- 1 x 400g tin of borlotti or cannellini beans
- 1 litre organic vegetable or chicken stock
- 75g baby spinach or kale
- 100g frozen peas
How To Make Jamie Oliver Chunky Winter Vegetable Soup
- Prep the Veggies: Trim and finely slice the celery, peel and chop the carrots, and wash and chop the leeks. Also, finely slice the garlic and chop the rosemary. Slice the bacon into small pieces.
- Start Cooking: In a large pan, pour 1 tablespoon of olive oil and heat it on medium. Add the rosemary and bacon. Cook until the bacon turns golden.
- Add Veggies: Add the chopped celery, carrots, leeks, and garlic to the pan. Cook on low heat for about 15 minutes, stirring occasionally, until the veggies are soft.
- Add Beans and Stock: Pour in the beans (no need to drain) and the vegetable or chicken stock. Bring it to a boil, then simmer for 30 minutes. Add more stock or water if needed.
- Final Touch: Add the spinach or kale and the frozen peas. Cook for an additional 3 minutes until the greens are vibrant. Taste and season with salt and pepper as needed.
