Jamie Oliver Satay Chicken Skewers Ingredients

Satay Sauce

  • ½ small bunch fresh coriander
  • 1 fresh red chilli
  • ½ clove garlic
  • 3 tbsp crunchy peanut butter
  • Soy sauce (to taste)
  • 2cm piece fresh ginger
  • 2 limes

Chicken Skewers

  • 4 pieces (180g each) of skinless chicken breasts
  • Runny honey (for drizzling)

Noodle Salad

  • 250g dried medium egg noodles
  • 100g unsalted cashews
  • ½ medium-sized red onion
  • 1 fresh red chilli
  • Small bunch of fresh coriander
  • 1-2 tbsp soy sauce
  • 1 lime
  • 1 tsp sesame oil
  • 1 tsp fish sauce
  • 1 tsp runny honey

Garnishes

  • 2 little gem lettuces
  • ½ small bunch fresh coriander
  • Optional: 1 fresh red chilli
  • Soy sauce (to taste)
  • 1 lime

Fruit & Mint Sugar

  • 1 large pineapple
  • 150g blueberries
  • Small bunch of fresh mint
  • 3 tbsp golden caster sugar
  • 1 lime
  • ½ pot (500g) Greek-style coconut yogurt

Seasonings

  • Olive oil
  • Extra virgin olive oil
  • Sea salt & black pepper

How To Make Jamie Oliver Satay Chicken Skewers

Satay Sauce

  1. In a food processor, blend coriander, red chili, garlic, peanut butter, soy sauce, and ginger.
  2. Add lime zest and juice from one lime. Blend until smooth.
  3. Divide the sauce into two bowls. Drizzle one with olive oil and set aside.

Chicken Skewers

  1. Skewer the chicken breasts and place them in a roasting tray.
  2. Coat the chicken with the remaining satay sauce.
  3. Drizzle olive oil and season with salt.
  4. Grill for 8-10 minutes on each side until cooked.
  5. Drizzle with honey and grill for another 8-10 minutes.

Noodle Salad

  1. Soak noodles in boiling water for 6 minutes.
  2. Toast cashews in a pan until golden.
  3. In a large bowl, mix chopped onion, chili, and coriander stalks with soy sauce, lime juice, sesame oil, and fish sauce.
  4. Drain noodles and add to the bowl.
  5. Add toasted cashews and toss everything together.

Fruit & Mint Sugar

  1. Slice the pineapple and arrange on a platter with blueberries.
  2. Crush mint leaves and mix with sugar.
  3. Sprinkle the mint sugar over the fruits.
  4. Cut a lime in half for squeezing.
  5. Serve with a pot of coconut yogurt.

To Serve

  1. Place chicken, lettuce, noodles, and garnishes on the table.
  2. Let everyone build their own plate with a squeeze of lime and a dash of soy sauce.
