Jamie Oliver Pickled Courgette Ingredients

  • 500g courgettes (zucchinis)
  • 3 shallots, finely chopped
  • 2 tbsp pure salt
  • 500ml apple cider vinegar
  • 140g golden caster sugar
  • 1 tsp mustard powder
  • 1 tsp mustard seeds
  • 1 tsp celery seeds
  • 1/2 dried chili, crumbled
  • 1 tsp ground turmeric

How To Make Jamie Oliver Pickled Courgette 

  1. Slice the courgettes into thin rounds using a knife or slicer. Place them in a large bowl, add the diced shallots, and sprinkle the salt over them. Fill the bowl with cold water, mix, and let it sit for an hour. After that, drain the water and pat the courgettes and shallots dry with paper towels.
  2. In a pot, combine all the brine ingredients. Heat the mixture on a medium flame until it simmers. Keep it simmering for about 3 minutes to ensure the sugar is fully dissolved. Turn off the heat and let it cool until it’s warm.
  3. Once the brine is warm, add the dried courgettes and shallots. Stir well to make sure everything is evenly mixed.
  4. Use two sterilized 500ml jars (you can sterilize them by washing them in hot, soapy water and drying them in an oven preheated to 170C for 10 minutes). Spoon the courgette and brine mixture into these jars.
  5. Close the jars tightly and place them in the fridge. Let it set for 2-3 days before you start using the pickles.

Pickled Courgettes will last in the fridge for up to 2 months if they stay unopened. After opening, they will last about 1 month.
