Jamie Oliver Barley Salad Ingredients
- 250g pearl barley, rinsed and drained
- 1 vegetable stock cube
- 40g frozen peas
- 1 tsp olive oil
- ¼ onion, finely chopped
- 1 garlic clove, finely chopped or grated
- 330g uncooked butternut squash
- 100g spinach
- 165g cherry tomatoes, quartered
- Salt and freshly ground black pepper
- Fresh basil leaves, to garnish

- Prepare Barley: In a saucepan, combine pearl barley and vegetable stock cube with 750ml boiling water. Stir and bring to a boil. Reduce heat and simmer for 35 minutes until tender. Add peas in the last 3 minutes and cover with a lid.
- Cook Onion and Garlic: In a separate frying pan, heat olive oil over medium-high heat. Add chopped onion and cook for 3 minutes. Add garlic and cook for another 30 seconds.
