This Jamie Oliver Authentic Italian Tomato Soup is one of my favorite soups of all time, made with carrots, celery, onions, garlic, and ripe tomatoes. Serve this jamie oliver italian tomato soup as entrée for Mince And Onion Pie, Baked Chicken Thighs or Baked Lobster Tails.

Jamie Oliver Italian Tomato Soup Ingredients

  • 6 large ripe tomatoes
  • A small bunch of fresh basil
  • 2 carrots
  • 2 celery stalks
  • 2 medium onions
  • 2 garlic cloves
  • 4.25 quarts chicken or vegetable broth
  • Olive oil
  • 2 cans (14-ounce each) plum tomatoes
  • Sea salt
  • Freshly ground black pepper

How To Make Jamie Oliver Italian Tomato Soup

  1. Prep the Veggies: Peel and slice the carrots, celery, onions, and garlic.
  2. Heat the Broth: In a separate saucepan, bring the chicken or vegetable broth to a boil.
  3. Start Cooking: In a large saucepan over medium heat, add 2 tablespoons of olive oil. Add all the sliced and chopped veggies. Cook for about 10 minutes with the lid slightly open, until the carrots are soft but still have their shape, and the onions turn golden.
  4. Add Tomatoes and Broth: Pour the boiling broth into the large saucepan. Add both canned and fresh tomatoes, including any green stalks for extra flavor. Stir well and bring to a boil. Lower the heat and simmer for 10 minutes with the lid on.
  5. Blend and Season: Remove from heat. Add salt, pepper, and fresh basil leaves. Use an immersion blender to blend the soup until smooth. Taste and adjust seasoning if needed.
