- 1 handful of fresh basil leaves, ripped apart
- 1 ball of buffalo mozzarella, thinly sliced (feel free to add more!)
- 1 handful of grated Parmesan cheese
How To Make Roasted Cod With Cherry Tomatoes, Basil And Mozzarella
- Heat the Oven: Preheat your oven to 425°F.
- Prepare the Fish: Put the cod fillets in a greased baking dish. Drizzle some olive oil on top and add a pinch of salt and pepper.
- Add Toppings: Layer the halved tomatoes, torn basil leaves, and mozzarella slices over the cod.
- Cheese It Up: Sprinkle some grated Parmesan cheese on top.
- Bake: Place the dish in the top part of the oven and roast for 15-20 minutes. You’ll know it’s ready when the cheese is melted and turns a golden color.
How To Store Leftovers
Put it in a sealed box and keep it in the fridge for up to 2 days. You can also freeze it for 2 months. Just thaw it in the fridge before you heat it up again.
