    I’m a total beginner and found a joint of Brisket in the freezer. My wife used to watch James Martin on a Saturday morning so I thought I’d try one of his recipe’s as that’s where she’d have also looked for inspiration (not that she needed it?) and they also look good on TV.
    However, trying to follow this recipe and I’m afraid it’s not making sense. In the highlights you say total cooking time is 40mins, rest time is 40mins, giving total time as 1hr50 (presume that includes 20mins prep time?), but in the instructions it says cook for 8-10hrs – that’s a big difference, and only rest for 10mins. I’ve set the oven to 350degF (gas mark 4) as instructions say for an 8hr slow cook? I’ll give it a go and see if it is cooked after just 40mins, otherwise it’ll stay in for the full 8hrs! I’d ask for some clarification and correction of the website please.
